Avocado Chicken Sandwhich


Todays Lunch- HOT AVOCADO CHICKEN SANDWHICH

Ingredients:
2 slices whole wheat or gluten-free bread ( I prefer low-sodium Ezekiel)
1 slice chedder, or cheese of your choice
1 chicken breast, cooked & chopped
1 Tbsp. green pepper, minced
1 Tbsp. Onion, minced
1 Tbsp. Vaganese
3 thin avocado slices
2 Tbsp. grapeseed oil (for sauteing)

Directions:
Chop Chicken, peppers, and onions and saute in separate pans in grapeseed oil (chicken in one pan, veggies in the other)

Make sure to cook veggies until soft

slice avocado and set to the side

When veggies and chicken are done, toast bread

As soon as the bread is done, spread the Veganese onto slices, then lay down the avocado, then cheese and top with hot chicken and veggies. Top with other bread slice and enjoy!
